Our process
Our process
The day before the cook, our lamb shoulders are seasoned and brined overnight to ensure that maximum flavour is absorbed into the meat. We then slow cook the shoulders in our homemade braise for 8 hours low and slow. Lastly, the delicious juices are reduced and glazed over the final product.
Our twice cooked potatoes are steamed, seasoned and baked in the oven until golden brown. We season with salt and olive oil for maximum flavour. Caution these potatoes are addictive!
